Caesars Palace is bringing a taste of Barcelona’s celebrated cocktail scene to Las Vegas this fall as SIPS Drinkery House takes over VISTA Cocktail Lounge from October 31 through December 31. Founded by bartenders Simone Caporale and Marc Álvarez, the Eixample bar was named The World’s Best Bar in 2023 by The World’s 50 Best Bars and has remained among the global top three in the two years since. Its limited-time Las Vegas residency coincides with Caesars Palace’s 60th anniversary.

SIPS is known for putting flavor and technique ahead of convention, pairing familiar ingredients with inventive preparation and playful presentation. At VISTA, guests will encounter signature creations including the Purple Rain, a contemporary take on a whiskey sour combining bourbon with wild sour honey and beetroot, and the Mosaic, which pairs pisco brandy with aromatic woods from the Amazon rainforest and arrives in a painted glass inspired by Barcelona’s modernist art movement. The collaboration offers a rare opportunity to experience the work of one of Barcelona’s most influential cocktail destinations without leaving the Strip.

The Curated Take

Las Vegas has long borrowed from the world’s great dining cities, but this collaboration feels particularly well suited to the city’s appetite for spectacle. SIPS brings something more interesting than a familiar European name: a distinct cocktail philosophy in which the drink itself remains the focus, while technique, glassware and presentation become part of the experience.
